Description

This Chicken Fajita Casserole is a flavorful, easy-to-make dish loaded with tender chicken, colorful bell peppers, onions, and bold fajita seasoning, all baked together with melted cheese for a comforting and satisfying meal.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 3 bell peppers (red, yellow, green), sliced
  • 1 medium onion, sliced
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 cup cooked rice
  • 1 ½ cups shredded Mexican blend cheese
  • 1 tablespoon olive oil
  • 2 tablespoons fajita seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion, and sauté for 5–7 minutes until softened.
  3. Stir in the fajita seasoning, salt, and black pepper. Cook for another 1–2 minutes.
  4. In a large mixing bowl, combine shredded chicken, cooked rice, diced tomatoes, sautéed vegetables, and sour cream. Mix well.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle shredded cheese evenly over the top.
  7. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for 5 minutes before serving.
