Ingredients
- 2 cups cooked chicken breast, shredded
- 3 bell peppers (red, yellow, green), sliced
- 1 medium onion, sliced
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 1 cup cooked rice
- 1 ½ cups shredded Mexican blend cheese
- 1 tablespoon olive oil
- 2 tablespoons fajita seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup sour cream
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion, and sauté for 5–7 minutes until softened.
- Stir in the fajita seasoning, salt, and black pepper. Cook for another 1–2 minutes.
- In a large mixing bowl, combine shredded chicken, cooked rice, diced tomatoes, sautéed vegetables, and sour cream. Mix well.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Sprinkle shredded cheese evenly over the top.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for 5 minutes before serving.

- You can substitute brown rice or cauliflower rice for a healthier option.
