Description
This easy, creamy chicken salad is a quick and satisfying dish perfect for lunches, light dinners, or meal prep. It’s tangy, crunchy, high in protein, low in carbs, and highly customizable.
Ingredients
- 3 cups cooked chicken (shredded or chopped)
- 1/4 cup red onion, finely chopped
- 2 celery stalks (including leafy tops), chopped (about 1 cup)
- 2 tbsp lemon juice
- 2 tbsp sour cream
- 3/4 cup mayonnaise
- 1/2 tsp salt
- Pepper to taste
Instructions
- Finely chop the red onion and celery.
- In a medium bowl, shred or break up the cooked chicken into small pieces.
- Add the red onion, celery, lemon juice, sour cream, mayonnaise, salt, and pepper to the chicken.
- Mix well until all ingredients are evenly coated in the creamy dressing.
- Chill in the fridge until ready to serve.
- Serve as is, or in sandwiches, on crackers, or over salad greens.
Notes
- Use rotisserie chicken, leftover chicken, or canned chicken for convenience.
- Chill for at least 30 minutes for best flavor.
- Not suitable for freezing.
