Description

This easy, creamy chicken salad is a quick and satisfying dish perfect for lunches, light dinners, or meal prep. It’s tangy, crunchy, high in protein, low in carbs, and highly customizable.


Ingredients

  • 3 cups cooked chicken (shredded or chopped)
  • 1/4 cup red onion, finely chopped
  • 2 celery stalks (including leafy tops), chopped (about 1 cup)
  • 2 tbsp lemon juice
  • 2 tbsp sour cream
  • 3/4 cup mayonnaise
  • 1/2 tsp salt
  • Pepper to taste

Instructions

  1. Finely chop the red onion and celery.
  2. In a medium bowl, shred or break up the cooked chicken into small pieces.
  3. Add the red onion, celery, lemon juice, sour cream, mayonnaise, salt, and pepper to the chicken.
  4. Mix well until all ingredients are evenly coated in the creamy dressing.
  5. Chill in the fridge until ready to serve.
  6. Serve as is, or in sandwiches, on crackers, or over salad greens.

Notes

  • Use rotisserie chicken, leftover chicken, or canned chicken for convenience.
  • Chill for at least 30 minutes for best flavor.
