Description

A moist and flavorful banana bread layered with a sweet cinnamon swirl and topped with a buttery streusel crumb. Perfect for breakfast, snack time, or dessert.


Ingredients

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter (cold)
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1/4 teaspoon salt
  • 1.5 cups mashed bananas (about 4 ripe medium-sized ones)
  • 1/3 cup melted butter (or oil)
  • 1/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 360°F and line a 4×8 inch loaf pan with parchment paper.
  2. In a small bowl, mix 1/2 cup flour, brown sugar, and 1 teaspoon cinnamon. Cut in cold butter until pea-sized crumbs form. Chill until ready to use.
  3. In a medium bowl, combine 1 3/4 cups flour, cornstarch, baking soda, 1/2 teaspoon cinnamon, nutmeg, and salt.
  4. In a separate bowl, whisk together mashed bananas, melted butter (or oil), sugar, eggs, and vanilla until smooth.
  5. Add wet ingredients to dry ingredients and gently fold until just combined. Do not overmix.
  6. In a small bowl, mix 1/4 cup granulated sugar with 1 teaspoon cinnamon to make the cinnamon sugar.
  7. Pour 2/3 of the batter into the prepared pan. Sprinkle with cinnamon sugar and add 1/2 to 2/3 of the streusel down the center.
  8. Top with remaining batter and sprinkle remaining streusel on top, pressing lightly.
  9. Bake for 45–50 minutes, until a toothpick inserted comes out mostly clean.
  10. Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

  • Use very ripe bananas for the best sweetness and flavor.
  • Do not overmix the batter to keep the bread soft and tender.
  • Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
  • This bread can be frozen for up to 2 months; thaw before serving.
  • Oil can be used instead of butter for a slightly lighter texture.
