This creamy mushroom chicken recipe features tender seared chicken breasts simmered in a rich, garlicky mushroom and cream sauce. It’s a comforting, restaurant-quality meal that comes together quickly in one skillet.
Ingredients
- 2 large chicken breasts, sliced in half lengthwise
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces mushrooms, sliced (baby bella or white mushrooms)
- 4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon chili flakes (optional)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Slice the chicken breasts in half lengthwise to create thinner cutlets. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter. Add the sliced mushrooms and sauté until they release moisture and turn golden, about 6-7 minutes.
- Add the minced garlic, thyme, and chili flakes (if using). Cook for 1 minute until fragrant.
- Pour in the chicken broth and deglaze the pan, scraping up any brown bits from the bottom.
- Reduce the heat to medium-low, then stir in the heavy cream and Parmesan cheese. Simmer for 3-4 minutes until the sauce thickens.
- Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 2-3 minutes until everything is heated through.
- Garnish with chopped parsley before serving.
Notes
- You can use chicken thighs instead of breasts for more flavor.
- For a lighter version, substitute half-and-half for heavy cream.
- Serve with pasta, mashed potatoes, or rice to soak up the creamy sauce.
