Description

These crispy smashed potatoes are golden on the outside and fluffy on the inside, tossed with simple seasonings for a delicious side dish.


Ingredients

  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a large pot of salted water to a boil and cook the potatoes until fork-tender, about 15–20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on the prepared baking sheet and gently smash each one using the bottom of a glass or fork.
  5. Drizzle with olive oil and sprinkle with garlic, salt, pepper, and thyme.
  6. Bake for 25–30 minutes, or until crispy and golden brown.
  7. Remove from oven, garnish with fresh parsley, and serve warm.

  • Add grated vegan parmesan or chili flakes for extra flavor.
