Description

These Dark Chocolate and Sea Salt Nut Bars are a healthy, satisfying snack packed with nuts, seeds, and a layer of rich dark chocolate. Perfect for meal prep, they’re naturally vegan and gluten free.


Ingredients

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1/2 cup pepitas
  • 1/4 cup sunflower seeds
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup maple syrup
  • 1/3 cup creamy unsweetened almond butter
  • 1/2 tsp vanilla extract
  • 3/4 cup vegan dark chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt, for topping

Instructions

  1. Preheat the oven to 325˚F / 163˚C and line an 8×8 inch pan with parchment paper.
  2. In a large mixing bowl, stir together the almonds, cashews, pepitas, sunflower seeds, chia seeds, cinnamon, and salt.
  3. In a small saucepan over low heat, stir together the maple syrup and almond butter until melted and smooth. Remove from heat and stir in vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until well combined.
  5. Transfer mixture to the prepared pan and press down firmly into an even layer.
  6. Bake for 18–22 minutes, or until golden brown and slightly firm to the touch. Remove and let cool completely in the pan.
  7. Once cool, melt the chocolate chips and coconut oil together, stirring until smooth.
  8. Pour the chocolate over the bars and spread into an even layer. Sprinkle with flaky sea salt.
  9. Refrigerate until chocolate is set, then cut into bars.

Notes

  • Store bars in an airtight container in the fridge for up to a week or freeze for longer storage.
  • You can substitute other nuts or seeds based on preference.
