Description
Egg Roll in a Bowl is a quick and healthy one-pan meal that combines all the delicious flavors of an egg roll without the wrapper. Packed with seasoned ground BEEF, crunchy coleslaw mix, and bold Asian-inspired flavors, it’s perfect for a low-carb dinner or meal prep.
Ingredients
- 1.5 lb ground BEEF
- 1 yellow onion, finely chopped
- 1 medium bag of coleslaw mixed with carrots
- 2 green onions, chopped diagonally
- 2 Tbsp sesame oil
- 1/4 cup light soy sauce
- 2 Tbsp hoisin sauce
- 4 cloves garlic, minced
- 1 tsp ground ginger
- 1/4 tsp red pepper flakes
- Kosher salt, to taste
- Freshly ground pepper, to taste
- Cooked brown rice, for garnish
Instructions
- In a small bowl, whisk together the soy sauce and hoisin sauce. Set aside.
- In a large pan over medium-high heat, cook the ground pork until browned, breaking it up with a spoon as it cooks.
- Season the BEFF with salt, pepper, ground ginger, and red pepper flakes, then stir in the sesame oil.
- Add the minced garlic and chopped yellow onion; simmer for about 8 minutes, or until the onion is tender.
- Pour in the soy sauce and hoisin mixture and stir well to combine.
- Add the coleslaw mix and cook for another 7 minutes, or until the cabbage is wilted and tender.
- Remove from heat and serve hot, garnished with chopped green onions and cooked brown rice if desired.
Notes
- Use ground turkey or chicken for a lighter option.
- Adjust red pepper flakes for more or less heat.
- Serve without rice for a low-carb or keto version.
- Store leftovers in an airtight container in the fridge for up to 3 days.
