Description

Egg Roll in a Bowl is a quick and healthy one-pan meal that combines all the delicious flavors of an egg roll without the wrapper. Packed with seasoned ground BEEF, crunchy coleslaw mix, and bold Asian-inspired flavors, it’s perfect for a low-carb dinner or meal prep.


Ingredients

  • 1.5 lb ground BEEF
  • 1 yellow onion, finely chopped
  • 1 medium bag of coleslaw mixed with carrots
  • 2 green onions, chopped diagonally
  • 2 Tbsp sesame oil
  • 1/4 cup light soy sauce
  • 2 Tbsp hoisin sauce
  • 4 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/4 tsp red pepper flakes
  • Kosher salt, to taste
  • Freshly ground pepper, to taste
  • Cooked brown rice, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce and hoisin sauce. Set aside.
  2. In a large pan over medium-high heat, cook the ground pork until browned, breaking it up with a spoon as it cooks.
  3. Season the BEFF with salt, pepper, ground ginger, and red pepper flakes, then stir in the sesame oil.
  4. Add the minced garlic and chopped yellow onion; simmer for about 8 minutes, or until the onion is tender.
  5. Pour in the soy sauce and hoisin mixture and stir well to combine.
  6. Add the coleslaw mix and cook for another 7 minutes, or until the cabbage is wilted and tender.
  7. Remove from heat and serve hot, garnished with chopped green onions and cooked brown rice if desired.

Notes

  • Use ground turkey or chicken for a lighter option.
  • Adjust red pepper flakes for more or less heat.
  • Serve without rice for a low-carb or keto version.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
