Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix thyme, garlic, lemon zest and juice, olive oil, salt, and pepper.
  3. Rub the mixture over the chicken thighs and let marinate for at least 30 minutes.
  4. Place chicken in a baking dish, skin-side up. Roast for 35–40 minutes or until internal temperature reaches 165°F (74°C).
  5. While chicken roasts, prepare the glaze: In a saucepan over medium heat, combine blueberries, honey, and balsamic vinegar.
  6. Simmer until the blueberries burst and the sauce thickens (about 8–10 minutes). Add cornstarch mixed with a little water if needed to thicken.
  7. Once chicken is done, brush with the blueberry glaze and return to oven for 5 more minutes to caramelize.
  8. Serve hot with extra glaze on the side.
