Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup fresh or frozen blueberries
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix thyme, garlic, lemon zest and juice, olive oil, salt, and pepper.
- Rub the mixture over the chicken thighs and let marinate for at least 30 minutes.
- Place chicken in a baking dish, skin-side up. Roast for 35–40 minutes or until internal temperature reaches 165°F (74°C).
- While chicken roasts, prepare the glaze: In a saucepan over medium heat, combine blueberries, honey, and balsamic vinegar.
- Simmer until the blueberries burst and the sauce thickens (about 8–10 minutes). Add cornstarch mixed with a little water if needed to thicken.
- Once chicken is done, brush with the blueberry glaze and return to oven for 5 more minutes to caramelize.
- Serve hot with extra glaze on the side.
