This Best Ever Lemon Poppy Seed Loaf is a soft, moist, and tangy quick bread bursting with fresh lemon flavor and the crunch of poppy seeds, topped with a delicious lemon glaze.
Ingredients
- 1 1/2 cups (180g) all-purpose flour
- 2 Tablespoons poppy seeds
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1/2 cup (120g) sour cream
- Zest of 2 lemons
- 1/4 cup (60ml) freshly squeezed lemon juice
- 1 teaspoon vanilla extract
- For the glaze: 1 cup (120g) powdered sugar
- 2–3 Tablespoons freshly squeezed lemon juice
Instructions
- Preheat the oven to 350°F (180°C) and grease a 9×5-inch loaf pan or line with parchment paper.
- In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt.
- In a separate large bowl, whisk together the melted butter and sugar. Add the eggs, one at a time, then whisk in sour cream, lemon zest, lemon juice, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the glaze by mixing powdered sugar with lemon juice until smooth. Drizzle over the cooled loaf before serving.
