Description

This Best Ever Lemon Poppy Seed Loaf is a soft, moist, and tangy quick bread bursting with fresh lemon flavor and the crunch of poppy seeds, topped with a delicious lemon glaze.


Ingredients

  • 1 1/2 cups (180g) all-purpose flour
  • 2 Tablespoons poppy seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120g) sour cream
  • Zest of 2 lemons
  • 1/4 cup (60ml) freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup (120g) powdered sugar
  • 23 Tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt.
  3. In a separate large bowl, whisk together the melted butter and sugar. Add the eggs, one at a time, then whisk in sour cream, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Prepare the glaze by mixing powdered sugar with lemon juice until smooth. Drizzle over the cooled loaf before serving.
