Ingredients
- 2 tablespoons butter
- 1 large yellow onion, sliced thin
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup white cooking wine (or chicken broth)
- 1 1/2 cups uncooked orzo pasta
- 2 cups shredded rotisserie chicken
- 2 cups beef broth
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, melt the butter and add the sliced onions.
- Cook onions, stirring frequently, until caramelized (about 15-20 minutes).
- Add garlic, Worcestershire sauce, balsamic vinegar, thyme, salt, and pepper. Cook for another 1-2 minutes.
- Pour in the white wine (or chicken broth) to deglaze the pan, scraping up any bits on the bottom.
- Stir in the uncooked orzo, shredded chicken, beef broth, and heavy cream. Mix well.
- Transfer mixture to a greased 9×13 inch casserole dish.
- Top with mozzarella and parmesan cheese evenly.
- Bake uncovered for 25-30 minutes, or until bubbly and golden on top.
- Let rest for 5 minutes before serving.
Notes
- Use chicken broth instead of white wine for a non-alcoholic version.
- Caramelizing the onions properly enhances the flavor greatly.
- Leftovers can be refrigerated for up to 3 days.
