Description

This French Onion Chicken Orzo Casserole is a hearty and flavorful dish combining the savory taste of French onion soup with tender chicken, creamy cheese, and orzo pasta for a perfect comfort meal.


Ingredients

  • 2 tablespoons butter
  • 1 large yellow onion, sliced thin
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup white cooking wine (or chicken broth)
  • 1 1/2 cups uncooked orzo pasta
  • 2 cups shredded rotisserie chicken
  • 2 cups beef broth
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt the butter and add the sliced onions.
  3. Cook onions, stirring frequently, until caramelized (about 15-20 minutes).
  4. Add garlic, Worcestershire sauce, balsamic vinegar, thyme, salt, and pepper. Cook for another 1-2 minutes.
  5. Pour in the white wine (or chicken broth) to deglaze the pan, scraping up any bits on the bottom.
  6. Stir in the uncooked orzo, shredded chicken, beef broth, and heavy cream. Mix well.
  7. Transfer mixture to a greased 9×13 inch casserole dish.
  8. Top with mozzarella and parmesan cheese evenly.
  9. Bake uncovered for 25-30 minutes, or until bubbly and golden on top.
  10. Let rest for 5 minutes before serving.

Notes

  • Use chicken broth instead of white wine for a non-alcoholic version.
  • Caramelizing the onions properly enhances the flavor greatly.
  • Leftovers can be refrigerated for up to 3 days.
