Description

These fresh spring rolls are light, healthy, and packed with crisp vegetables, herbs, and optional tofu. Served with a delicious peanut dipping sauce, they make for a perfect appetizer or light meal.


Ingredients

  • 4 ounces rice noodles
  • 8 rice paper wrappers
  • 1 cup shredded romaine or butter lettuce
  • 1 cup shredded red cabbage
  • 1 large carrot, peeled and julienned
  • 1 medium cucumber, julienned
  • 2 medium green onions, sliced into matchsticks
  • ½ cup fresh cilantro leaves
  • ½ cup fresh mint leaves
  • ½ cup fresh basil leaves
  • 4 ounces baked tofu (optional), cut into strips
  • Peanut sauce for dipping (see recipe on the same page)

Instructions

  1. Cook the rice noodles according to the package directions. Drain, rinse with cold water, and set aside.
  2. Prepare all the filling ingredients and place them within easy reach of your workspace.
  3. Fill a shallow pan or large plate with warm water. Dip one rice paper wrapper into the water for about 20 seconds until soft and pliable.
  4. Lay the softened wrapper on a clean, flat surface. In the lower third, layer a small amount of lettuce, cabbage, carrots, cucumber, green onion, herbs, noodles, and tofu if using.
  5. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom like a burrito.
  6. Repeat with the remaining wrappers and ingredients.
  7. Serve the rolls whole or sliced in half with peanut sauce for dipping.

Notes

  • Do not over-soak the rice paper wrappers or they may tear.
  • Use fresh herbs for best flavor.
  • Rolls are best served fresh but can be stored in the fridge for a few hours covered with a damp cloth.
