Description
These fresh spring rolls are light, healthy, and packed with crisp vegetables, herbs, and optional tofu. Served with a delicious peanut dipping sauce, they make for a perfect appetizer or light meal.
Ingredients
- 4 ounces rice noodles
- 8 rice paper wrappers
- 1 cup shredded romaine or butter lettuce
- 1 cup shredded red cabbage
- 1 large carrot, peeled and julienned
- 1 medium cucumber, julienned
- 2 medium green onions, sliced into matchsticks
- ½ cup fresh cilantro leaves
- ½ cup fresh mint leaves
- ½ cup fresh basil leaves
- 4 ounces baked tofu (optional), cut into strips
- Peanut sauce for dipping (see recipe on the same page)
Instructions
- Cook the rice noodles according to the package directions. Drain, rinse with cold water, and set aside.
- Prepare all the filling ingredients and place them within easy reach of your workspace.
- Fill a shallow pan or large plate with warm water. Dip one rice paper wrapper into the water for about 20 seconds until soft and pliable.
- Lay the softened wrapper on a clean, flat surface. In the lower third, layer a small amount of lettuce, cabbage, carrots, cucumber, green onion, herbs, noodles, and tofu if using.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom like a burrito.
- Repeat with the remaining wrappers and ingredients.
- Serve the rolls whole or sliced in half with peanut sauce for dipping.
Notes
- Do not over-soak the rice paper wrappers or they may tear.
- Use fresh herbs for best flavor.
- Rolls are best served fresh but can be stored in the fridge for a few hours covered with a damp cloth.
- Feel free to customize the filling with your favorite vegetables or protein.
