Ingredients
- 1 cucumber, chopped into bite-sized pieces
- 1 green bell pepper, chopped
- 1/2 small red onion, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/3 cup pitted Kalamata olives
- 1/2 cup feta cheese, cut into cubes or crumbled
- 1/4 cup extra-virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano, more for sprinkling
- 1/4 teaspoon sea salt
- Freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the cucumber, green pepper, red onion, cherry tomatoes, and olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Add the feta cheese on top and sprinkle with a bit more oregano.
- Serve immediately or chill for 15-30 minutes to let flavors meld.
