Description

This refreshing Greek salad is a classic Mediterranean dish made with juicy tomatoes, crisp cucumbers, red onion, bell pepper, olives, and creamy feta cheese, all tossed in a tangy red wine vinaigrette.


Ingredients

  • 1 cucumber, chopped into bite-sized pieces
  • 1 green bell pepper, chopped
  • 1/2 small red onion, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives
  • 1/2 cup feta cheese, cut into cubes or crumbled
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano, more for sprinkling
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the cucumber, green pepper, red onion, cherry tomatoes, and olives.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Add the feta cheese on top and sprinkle with a bit more oregano.
