Description

A hearty and healthy ground turkey and wild rice soup, packed with vegetables and seasoned perfectly. It’s comforting, flavorful, and ideal for a cozy dinner or meal prep.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 1 tsp salt (or to taste)
  • 1/2 tsp pepper
  • 6 cups chicken broth (low sodium preferred)
  • 1 cup uncooked wild rice blend
  • 1 bay leaf
  • 1 cup kale or spinach, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté for 2-3 minutes until fragrant.
  2. Add ground turkey to the pot and cook until browned, breaking it apart with a spoon.
  3. Stir in diced carrots, celery, thyme, rosemary, oregano, salt, and pepper. Cook for 5 more minutes.
  4. Pour in the chicken broth and add the wild rice and bay leaf. Stir to combine.
  5. Bring the soup to a boil, then reduce heat to a simmer and cover. Cook for 45-50 minutes, or until the rice is tender.
  6. Remove the bay leaf and stir in kale or spinach if using. Simmer for another 5 minutes until greens are wilted.
  7. Taste and adjust seasonings if needed. Serve hot.

Notes

  • You can use ground chicken instead of turkey.
  • Leftovers store well in the fridge for up to 4 days.
  • Add extra broth if soup thickens too much after cooling.
