Description

A hearty and nutritious casserole made with lean ground turkey, tender sweet potatoes, fresh vegetables, and melted cheese. This comforting baked dish is perfect for an easy and satisfying weeknight dinner.


Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish with olive oil.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté for about 3–4 minutes until fragrant and translucent.
  3. Add the ground turkey and cook for 5–7 minutes, breaking it apart with a spoon until fully browned. Drain excess fat if needed.
  4. Stir in the diced sweet potatoes, zucchini, smoked paprika, Italian seasoning, salt, and pepper. Cook for another 5–7 minutes until the vegetables start to soften.
  5. Transfer the turkey and vegetable mixture to the prepared baking dish and spread evenly.
  6. Sprinkle the shredded cheese over the top of the mixture.
  7. Bake in the preheated oven for 25–30 minutes until the sweet potatoes are tender and the cheese is melted and bubbly.
  8. Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

  • You can substitute ground chicken for ground turkey if preferred.
  • For extra flavor, add a pinch of chili flakes or a dash of cumin.
