Description

These soft and sweet Italian Cookies are a traditional treat, perfect for holidays and special occasions. Made with simple ingredients, they’re topped with a colorful glaze and festive sprinkles.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 4 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1/2 teaspoon salt

For the glaze:

  • 2 cups powdered sugar
  • 34 tablespoons milk
  • 1/2 teaspoon vanilla or almond extract
  • Sprinkles, for decorating

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the eggs until light and frothy.
  3. Add the sugar, butter, vanilla extract, and almond extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough will be soft but should not be sticky.
  6. Using a tablespoon or cookie scoop, portion out dough and roll into balls. Place them on the prepared baking sheet.
  7. Bake for 8–10 minutes, or until the bottoms are lightly golden. The tops should remain pale.
  8. Remove from oven and let cool completely on a wire rack.
  9. To make the glaze, mix powdered sugar with milk and extract until smooth and slightly thick.
  10. Dip the top of each cookie into the glaze and return to the rack. Immediately top with sprinkles before the glaze sets.

Notes

  • You can substitute lemon extract for almond extract for a citrusy flavor.
  • If the glaze is too thick, add a little more milk; if too thin, add more powdered sugar.
  • Store cookies in an airtight container at room temperature for up to 5 days.
