Description
These soft and sweet Italian Cookies are a traditional treat, perfect for holidays and special occasions. Made with simple ingredients, they’re topped with a colorful glaze and festive sprinkles.
Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 4 cups all-purpose flour
- 5 teaspoons baking powder
- 1/2 teaspoon salt
For the glaze:
- 2 cups powdered sugar
- 3–4 tablespoons milk
- 1/2 teaspoon vanilla or almond extract
- Sprinkles, for decorating
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the eggs until light and frothy.
- Add the sugar, butter, vanilla extract, and almond extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough will be soft but should not be sticky.
- Using a tablespoon or cookie scoop, portion out dough and roll into balls. Place them on the prepared baking sheet.
- Bake for 8–10 minutes, or until the bottoms are lightly golden. The tops should remain pale.
- Remove from oven and let cool completely on a wire rack.
- To make the glaze, mix powdered sugar with milk and extract until smooth and slightly thick.
- Dip the top of each cookie into the glaze and return to the rack. Immediately top with sprinkles before the glaze sets.
Notes
- You can substitute lemon extract for almond extract for a citrusy flavor.
- If the glaze is too thick, add a little more milk; if too thin, add more powdered sugar.
- Store cookies in an airtight container at room temperature for up to 5 days.
