Description

This Marry Me Tofu recipe features crispy tofu smothered in a rich and creamy sun-dried tomato sauce, inspired by the popular ‘Marry Me Chicken’ dish. It’s a vegan, dairy-free, and plant-based take on a comforting favorite, perfect for a cozy dinner.


Ingredients

  • 1 (14-ounce) block extra-firm tofu, pressed and cut into cubes
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 cup vegetable broth
  • 1/2 cup canned full-fat coconut milk
  • 1/2 cup chopped sun-dried tomatoes (in oil, drained)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Fresh basil, chopped (for garnish)

Instructions

  1. Press the tofu for at least 30 minutes, then cut it into bite-sized cubes.
  2. In a bowl, toss tofu cubes with cornstarch until evenly coated.
  3. Heat olive oil in a large skillet over medium heat. Add the tofu and cook until golden and crispy on all sides. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
  5. Add vegetable broth, coconut milk, sun-dried tomatoes, oregano, thyme, nutritional yeast, salt, and pepper. Stir to combine.
  6. Simmer the sauce over medium-low heat for 5–10 minutes until slightly thickened.
  7. Add the crispy tofu back to the skillet and stir to coat in the sauce.
  8. Simmer for another 2–3 minutes to let the flavors meld.
  9. Garnish with fresh basil and serve hot over pasta, rice, or with crusty bread.

Notes

  • For extra crispy tofu, bake or air fry instead of pan-frying.
  • Use other plant-based milk if you prefer a lighter sauce.
  • Serve with pasta, rice, mashed potatoes, or crusty bread for a complete meal.
  • Leftovers keep well in the fridge for 3–4 days.
