Description

This One Pot Creamy Cajun Chicken Pasta is a rich and flavorful weeknight meal made with tender chicken breast, pasta, and a spicy, creamy Cajun sauce. Everything cooks in one pot for minimal cleanup and maximum flavor.


Ingredients

  • 1 Tbsp olive oil
  • 1 lb. boneless, skinless chicken breast
  • 2 tsp Cajun seasoning
  • 1 bell pepper, sliced
  • 1/2 lb. fettuccine
  • 1 can (15 oz) fire roasted diced tomatoes
  • 2 cups chicken broth
  • 2 oz. cream cheese
  • 1/4 cup grated Parmesan
  • 2 green onions, sliced

Instructions

  1. Cut the chicken breast into bite-sized pieces and season with Cajun seasoning.
  2. Heat olive oil in a deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned.
  3. Add sliced bell pepper and sauté for a few minutes until slightly softened.
  4. Add the uncooked fettuccine, diced tomatoes (with juices), and chicken broth to the pot. Stir to combine and ensure pasta is mostly submerged.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 10 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  6. Add cream cheese and Parmesan. Stir until melted and the sauce becomes creamy.
  7. Top with sliced green onions and serve hot.

  • Adjust Cajun seasoning to your spice preference.
  • Use any pasta shape if fettuccine is unavailable.
  • Add a splash of milk or broth if the sauce becomes too thick.
