Description
This One Pot Creamy Cajun Chicken Pasta is a rich and flavorful weeknight meal made with tender chicken breast, pasta, and a spicy, creamy Cajun sauce. Everything cooks in one pot for minimal cleanup and maximum flavor.
Ingredients
- 1 Tbsp olive oil
- 1 lb. boneless, skinless chicken breast
- 2 tsp Cajun seasoning
- 1 bell pepper, sliced
- 1/2 lb. fettuccine
- 1 can (15 oz) fire roasted diced tomatoes
- 2 cups chicken broth
- 2 oz. cream cheese
- 1/4 cup grated Parmesan
- 2 green onions, sliced
Instructions
- Cut the chicken breast into bite-sized pieces and season with Cajun seasoning.
- Heat olive oil in a deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned.
- Add sliced bell pepper and sauté for a few minutes until slightly softened.
- Add the uncooked fettuccine, diced tomatoes (with juices), and chicken broth to the pot. Stir to combine and ensure pasta is mostly submerged.
- Bring to a boil, then reduce heat to low and cover. Simmer for about 10 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Add cream cheese and Parmesan. Stir until melted and the sauce becomes creamy.
- Top with sliced green onions and serve hot.
Notes
- Adjust Cajun seasoning to your spice preference.
- Use any pasta shape if fettuccine is unavailable.
- Add a splash of milk or broth if the sauce becomes too thick.
