Ingredients
- 1 tablespoon olive oil
- 14 ounces smoked sausage, sliced
- 1 tablespoon butter
- 1/2 yellow onion, diced
- 1/2 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 2 cups chicken broth
- 1 cup heavy cream
- 8 ounces penne pasta (or any short pasta)
- 1/2 cup grated Parmesan cheese
- Chopped fresh parsley, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- In the same skillet, melt butter. Add diced onion and bell pepper and cook until softened, about 3-4 minutes.
- Add minced garlic, Cajun seasoning, smoked paprika, black pepper, and salt. Stir and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stir to combine.
- Add pasta and bring to a boil. Reduce heat, cover, and simmer for 12-15 minutes or until pasta is tender, stirring occasionally.
- Stir in cooked sausage and Parmesan cheese. Cook for 1-2 minutes more until cheese is melted and everything is well combined.
- Garnish with chopped parsley if desired and serve hot.
Notes
- Adjust Cajun seasoning to your spice preference.
- Use turkey or chicken sausage for a lighter option.
- Can be stored in the fridge for up to 3 days.
