These Orange Ginger Honey Cakes are moist, aromatic, and delicately sweet with a warm spice kick. Perfect as a tea-time treat or a light dessert, they’re made with honey, fresh orange zest, and ground ginger for a flavorful bite.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup honey
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup orange juice (freshly squeezed)
- 1 tbsp orange zest
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup plain yogurt
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, baking soda, salt, ginger, and cinnamon.
- In another bowl, combine the honey, brown sugar, melted butter, eggs, orange juice, orange zest, and yogurt. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a stronger ginger flavor, add 1 tsp of freshly grated ginger.
- You can substitute Greek yogurt for plain yogurt for extra richness.
- Top with a honey glaze or powdered sugar for added sweetness.
