Ingredients
- 1 cup raspberries (fresh or frozen)
- 1 cup almond milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup chia seeds
Instructions
- Add the raspberries, almond milk, maple syrup, and vanilla extract to a blender and blend until smooth.
- Pour the blended mixture into a bowl or jar.
- Add the chia seeds and whisk well until fully combined.
- Let the mixture sit for 5–10 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours or overnight until thick and pudding-like.
- Stir before serving and top with extra raspberries or your favorite toppings if desired.
Notes
- If using frozen raspberries, allow them to thaw slightly before blending for a smoother texture.
- Adjust sweetness by adding more or less maple syrup to taste.
- Store covered in the refrigerator for up to 3 days.
- Top with granola, coconut flakes, nuts, or additional berries for extra flavor and texture.
