Description

A creamy, naturally sweet chia pudding blended with raspberries and almond milk. This easy make-ahead recipe is perfect for breakfast, a snack, or a light healthy dessert.

Ingredients

  • 1 cup raspberries (fresh or frozen)
  • 1 cup almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup chia seeds

Instructions

  1. Add the raspberries, almond milk, maple syrup, and vanilla extract to a blender and blend until smooth.
  2. Pour the blended mixture into a bowl or jar.
  3. Add the chia seeds and whisk well until fully combined.
  4. Let the mixture sit for 5–10 minutes, then stir again to prevent clumping.
  5. Cover and refrigerate for at least 2 hours or overnight until thick and pudding-like.
  6. Stir before serving and top with extra raspberries or your favorite toppings if desired.

Notes

  • If using frozen raspberries, allow them to thaw slightly before blending for a smoother texture.
  • Adjust sweetness by adding more or less maple syrup to taste.
  • Store covered in the refrigerator for up to 3 days.
  • Top with granola, coconut flakes, nuts, or additional berries for extra flavor and texture.
