Description

A hearty and comforting soup loaded with turkey sausage, tender cheese tortellini, white beans, and fresh spinach in a flavorful tomato broth. Perfect for an easy, satisfying weeknight meal.


Ingredients

  • 2 tbsp olive oil
  • 1.5 cups yellow onion, diced (about 1/2 a large onion)
  • 3 cloves garlic, minced
  • 1 lb turkey sausage
  • 1 tbsp Italian spice blend
  • 1 can herbs and spices diced tomatoes (756 mL)
  • 1 can white navy beans (540 mL), rinsed and drained
  • 900 ml vegetable broth
  • 3 cups frozen cheese tortellini
  • 6 cups spinach (1 x 284 g bag)
  • Salt and black pepper, to taste
  • Parmesan cheese, for topping

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and minced garlic and sauté for about 5 minutes, stirring frequently, until fragrant and the onion becomes translucent.
  2. Slice the casing of each sausage lengthwise and remove the sausage meat. Add the meat to the pot with the onion and garlic and cook for about 5 minutes, breaking it apart as it cooks, until fully cooked and no longer pink. Stir in the Italian spice blend.
  3. Add the diced tomatoes with their juices, navy beans, and vegetable broth. Stir well and bring the mixture to a simmer. Cook for about 10 minutes.
  4. Stir in the spinach (in batches if needed) and frozen tortellini. Cover and simmer for about 10 minutes, stirring occasionally, until the spinach wilts and the tortellini is tender. Season with salt and black pepper to taste before serving.

Notes

  • Top each serving with freshly grated Parmesan cheese for extra flavor.
  • If fresh tortellini is used instead of frozen, reduce the simmering time slightly.
  • Kale can be substituted for spinach if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • The soup may thicken as it sits; add a splash of broth when reheating if needed.
