Ingredients

  • 3 chicken breasts (boneless skinless)
  • 1 packet fajita seasoning
  • 1 medium onion (chopped)
  • 2 cans tomatoes with chilies
  • 1 can black beans (rinsed)
  • 1 can corn (drained)
  • 1 red bell pepper (chopped)
  • 4 cups chicken broth
  • 2 cloves garlic (minced)
  • 1 bay leaf
  • 1 tablespoon chopped cilantro (for garnish)
  • 1 cup tortilla strips (for garnish)

Instructions

  1. Add the chicken breasts, fajita seasoning, chopped onion, tomatoes with chilies, black beans, corn, red bell pepper, chicken broth, minced garlic, and bay leaf to the slow cooker. Stir gently to combine.
  2. Cover and cook on low for 6 hours.
  3. Remove the chicken breasts, shred them with two forks, and return the shredded chicken to the slow cooker.
  4. Cook for an additional 20 minutes to allow the flavors to blend.
