Description

Ingredients

  • 2 large eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1 (10-oz) bag frozen strawberries, thawed and diced (do not drain)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together eggs, oil, sugar, and vanilla extract until smooth. Add baking powder, baking soda, cinnamon, and salt, then whisk until fully combined.
  3. Add flour and gently fold until just combined; the batter will be thick. Fold in the diced strawberries with their juices until evenly incorporated.
  4. Pour batter into the prepared pan and spread evenly. Bake for 50–60 minutes, covering loosely with foil after 40 minutes if the top browns too quickly, until a toothpick inserted in the center comes out clean.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
