Description

These strawberry brownies are a fun and simple dessert made with a strawberry cake mix. They’re chewy, dense, and packed with sweet strawberry flavor, perfect for a quick and colorful treat.


Ingredients

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk or heavy cream (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or lightly grease it.
  2. In a large bowl, mix together the strawberry cake mix, eggs, and oil until well combined. The batter will be thick.
  3. Spread the batter evenly into the prepared pan.
  4. Bake for 18–22 minutes, or until the edges are just starting to brown and a toothpick inserted in the center comes out mostly clean.
  5. Let the brownies cool completely in the pan.
  6. To make the glaze, mix the powdered sugar, 1 tablespoon of milk or cream, and vanilla extract in a small bowl. Add more milk if needed to reach desired consistency.
  7. Drizzle glaze over the cooled brownies, let it set, then cut into squares and serve.

Notes

  • Do not overbake; brownies will firm up as they cool.
  • Use heavy cream for a richer glaze.
  • Add diced strawberries for extra fruit flavor, but note this may alter texture.
