Ingredients
- 1 cup rolled oats
- 1 cup raw cashews
- 1 cup freeze-dried strawberries
- 4 oz cream cheese, softened
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1–2 tablespoons almond milk (as needed for texture)
Instructions
- Add the rolled oats, cashews, and freeze-dried strawberries to a food processor. Blend until a fine crumb forms.
- Add the softened cream cheese, honey (or maple syrup), and vanilla extract. Blend again until fully combined.
- If the mixture is too dry, add almond milk 1 tablespoon at a time until the dough comes together.
- Scoop out tablespoon-sized portions and roll into bite-sized balls.
- Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator until ready to serve.
