Description

These Strawberry Cheesecake No-Bake Energy Bites are a healthy, sweet snack made with wholesome ingredients like oats, cashews, and freeze-dried strawberries. They’re soft, creamy, naturally sweetened, and perfect for meal prep or an on-the-go treat.

Ingredients

  • 1 cup rolled oats
  • 1 cup raw cashews
  • 1 cup freeze-dried strawberries
  • 4 oz cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 12 tablespoons almond milk (as needed for texture)

Instructions

  1. Add the rolled oats, cashews, and freeze-dried strawberries to a food processor. Blend until a fine crumb forms.
  2. Add the softened cream cheese, honey (or maple syrup), and vanilla extract. Blend again until fully combined.
  3. If the mixture is too dry, add almond milk 1 tablespoon at a time until the dough comes together.
  4. Scoop out tablespoon-sized portions and roll into bite-sized balls.
  5. Place the energy bites on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator until ready to serve.

Notes

  • Use maple syrup instead of honey to keep the recipe vegetarian-friendly.
  • If you prefer a dairy-free version, substitute the cream cheese with a dairy-free alternative.
  • Store in the refrigerator for up to 5 days or freeze for longer storage.
  • If the mixture feels too sticky, chill for 10–15 minutes before rolling.
