Ingredients
- 1 package (3 oz) strawberry gelatin
- 1 cup boiling water
- 1 can (20 oz) crushed pineapple, undrained
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 2 cups mini marshmallows
- 1 cup fresh strawberries, chopped
- 1 cup sour cream
Instructions
- In a large bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved.
- Add the entire can of crushed pineapple (with juice) to the gelatin and mix well.
- Refrigerate for about 15-20 minutes, or until slightly thickened but not fully set.
- Fold in the whipped topping and sour cream until well combined.
- Add mini marshmallows and chopped strawberries. Stir to combine.
- Refrigerate for at least 2 hours or until fully set.
- Stir gently before serving. Garnish with extra strawberries if desired.
Notes
- You can substitute the fresh strawberries with frozen (thawed and drained).
- For a tangier flavor, add a few tablespoons of cream cheese.
- Best served chilled and consumed within 2-3 days.
- Use sugar-free gelatin and light whipped topping for a lower-calorie version.
