Description

These oven-dried cherry tomatoes are a simple and delicious way to preserve the flavor of ripe summer tomatoes. Slowly dried in the oven with herbs and olive oil, they make a great addition to salads, pastas, sandwiches, or antipasto platters.


Ingredients

  • 4 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°F (95°C).
  2. Line a large baking sheet with parchment paper.
  3. Cut the cherry tomatoes in half and place them cut side up on the baking sheet.
  4. Drizzle with olive oil.
  5. Sprinkle with dried oregano, basil, thyme, salt, and pepper.
  6. Place in the oven and dry for 3 to 4 hours, or until the tomatoes are shriveled but still slightly moist.
  7. Remove from the oven and allow to cool completely.
  8. Store in an airtight container in the fridge or freeze for long-term storage.
