Description

This Trinidad Coconut Sweet Bread is a traditional Caribbean treat made with grated coconut, raisins, cherries, and warm spices, perfect for breakfast or as a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup grated coconut (fresh or desiccated)
  • 1/4 cup raisins
  • 1/4 cup chopped mixed peel
  • 1/4 cup chopped maraschino cherries
  • 3 tbsp melted butter
  • 1/2 cup evaporated milk
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1 egg (beaten)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Add the grated coconut, raisins, mixed peel, and cherries. Stir to combine.
  4. In a separate bowl, mix the melted butter, evaporated milk, water, vanilla extract, and beaten egg.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • You can use fresh or desiccated coconut, but fresh coconut gives a richer flavor.
  • Adjust the amount of dried fruit to your preference.
  • This bread keeps well for several days in an airtight container.
