Description

These Vegan Date Squares are a delicious and healthy treat made with a sweet date filling and a crumbly oat crust. They’re naturally sweetened, easy to make, and perfect as a snack or dessert.


Ingredients

  • 2 cups (300 g) pitted dates
  • 1 cup (240 ml) water
  • 1 tsp vanilla extract
  • 1 ½ cups (135 g) rolled oats
  • 1 cup (90 g) oat flour
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup (80 ml) coconut oil, melted
  • ¼ cup (60 ml) maple syrup

Instructions

  1. Preheat the oven to 350°F (180°C). Line a square baking dish (8×8 inch) with parchment paper.
  2. In a saucepan over medium heat, combine the dates and water. Cook for about 10 minutes or until the dates are soft and the mixture is thickened. Stir in the vanilla extract and mash to form a paste. Set aside.
  3. In a large bowl, mix the rolled oats, oat flour, cinnamon, and salt.
  4. Add the melted coconut oil and maple syrup to the dry ingredients and mix until crumbly and well combined.
  5. Press half of the oat mixture firmly into the bottom of the prepared baking dish.
  6. Spread the date mixture evenly over the crust.
  7. Top with the remaining oat mixture, pressing it gently into the date layer.
  8. Bake for 25–30 minutes or until golden brown on top.
  9. Let cool completely before slicing into squares.

Notes

  • You can store the squares in the fridge for up to 5 days.
  • To make them gluten-free, use certified gluten-free oats.
  • For a firmer texture, refrigerate for a few hours before serving.
