Ingredients
- 1 and 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 tbsp lemon zest (about 1 lemon)
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1 and 1/2 cups fresh blackberries (halved if large)
- 1 tbsp flour (to coat blackberries)
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in sour cream, lemon zest, lemon juice, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Toss blackberries with 1 tablespoon of flour, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar and lemon juice to make the glaze.
- Drizzle the glaze over the cooled bread before serving.

- Use fresh blackberries for best texture; frozen berries may add extra moisture.
- Do not overmix the batter to keep the bread tender.
