Ingredients
- 1 tablespoon olive oil
- 2 cups cherry tomatoes
- 1/4 teaspoon kosher salt
- 4 slices crusty bread
- 1/2 cup whole milk ricotta cheese
- 2 tablespoons chopped fresh basil (or parsley)
- 1 clove garlic, peeled and halved
- Freshly ground black pepper, to taste
Instructions
- Heat the olive oil in a skillet over medium-high heat until shimmering.
- Add the cherry tomatoes and cook, shaking the pan occasionally, until they begin to blister and burst, about 5 to 7 minutes. Season with salt and set aside.
- While the tomatoes cook, toast the bread slices until golden and crispy.
- Rub each slice of toast with the cut side of the garlic clove for added flavor.
- Spread a generous amount of ricotta cheese onto each toast.
- Spoon the blistered tomatoes over the ricotta.
- Sprinkle with chopped basil and season with freshly ground black pepper.
- Serve immediately while warm.
