Description

Blistered Tomato Toasts are a simple yet flavorful appetizer or light meal made with juicy cherry tomatoes quickly blistered in a hot pan, served over crispy toasted bread with creamy ricotta and fresh herbs.


Ingredients

  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes
  • 1/4 teaspoon kosher salt
  • 4 slices crusty bread
  • 1/2 cup whole milk ricotta cheese
  • 2 tablespoons chopped fresh basil (or parsley)
  • 1 clove garlic, peeled and halved
  • Freshly ground black pepper, to taste

Instructions

  1. Heat the olive oil in a skillet over medium-high heat until shimmering.
  2. Add the cherry tomatoes and cook, shaking the pan occasionally, until they begin to blister and burst, about 5 to 7 minutes. Season with salt and set aside.
  3. While the tomatoes cook, toast the bread slices until golden and crispy.
  4. Rub each slice of toast with the cut side of the garlic clove for added flavor.
  5. Spread a generous amount of ricotta cheese onto each toast.
  6. Spoon the blistered tomatoes over the ricotta.
  7. Sprinkle with chopped basil and season with freshly ground black pepper.
  8. Serve immediately while warm.
