Description
This classic Blueberry Buckle is a soft, moist cake packed with fresh blueberries and topped with a sweet, crunchy streusel. It’s a delicious and easy-to-make dessert perfect for breakfast, brunch, or any time of day.
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup butter, room temperature
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 2 cups fresh blueberries
- 1/2 cup light brown sugar
- 1/3 cup all-purpose flour (for topping)
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat the oven to 375°F. Grease a 9×9-inch baking dish and set aside.
- In a medium bowl, whisk together 2 cups flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, mix the butter and sugar together on medium speed until light and fluffy.
- Add the egg and mix until incorporated, scraping the sides of the bowl as needed.
- Alternately add the flour mixture and milk into the butter mixture, starting and ending with the flour mixture. Mix until just combined.
- Gently fold in the blueberries by hand.
- Spread the batter into the prepared pan evenly.
- In a small bowl, combine the brown sugar, 1/3 cup flour, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the batter.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
Notes
- Fresh blueberries work best, but you can use frozen—just don’t thaw them first.
- This buckle is best served warm, but also tastes great at room temperature.
- Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 4 days.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
