Description

These creamy, no-bake blueberry cheesecake protein bites deliver a smooth cheesecake flavor with bursts of juicy blueberries. They make a quick, high-protein snack or healthy dessert perfect for meal prep or post-workout fuel.


Ingredients

  • 1 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/3 cup cream cheese, softened
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1/2 cup dried blueberries or finely chopped fresh blueberries
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 23 tablespoons milk of choice

Instructions

  1. In a mixing bowl, combine the vanilla protein powder and almond flour until evenly mixed.
  2. Add the softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla extract to the dry ingredients.
  3. Mix until a thick dough begins to form.
  4. Stir in the blueberries and chia seeds, mixing gently so they are evenly distributed.
  5. Add milk one tablespoon at a time if the mixture is too dry, until the dough becomes soft but not sticky.
  6. Roll the mixture into small bite-sized balls using your hands.
  7. Place the bites on a lined tray and refrigerate for at least 30 minutes to firm up.
  8. Store in an airtight container in the refrigerator and enjoy chilled.
