Description
Bourekakia are crispy, golden pastry rolls made with thin yufka or phyllo dough, traditionally filled with cheese or savory fillings and baked or fried until perfectly crisp.
Ingredients
- 10 sheets phyllo dough (or yufka)
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1/4 cup milk
- 1/4 cup olive oil (plus more for brushing)
- 1/2 teaspoon black pepper
- Vegetable oil for frying (if frying instead of baking)
Instructions
- In a bowl, mix feta, ricotta, parsley, black pepper, and egg until well combined.
- Lay one sheet of phyllo dough on a clean surface and lightly brush with olive oil.
- Cut the sheet into long strips and place a spoonful of filling at one end of each strip.
- Roll tightly into a cigar shape, folding in the sides as you roll.
- Repeat with remaining dough and filling.
- To bake: Place rolls on a lined baking tray, brush with olive oil, and bake at 180°C (350°F) for 20–25 minutes until golden brown.
- To fry: Heat vegetable oil in a pan and fry rolls until crisp and golden, about 2–3 minutes per side. Drain on paper towels before serving.
Notes
- Keep phyllo covered with a damp towel to prevent drying out.
- You can substitute the cheese filling with spinach, minced meat, or potatoes.
- Serve warm for best texture and flavor.
