Description

Bourekakia are crispy, golden pastry rolls made with thin yufka or phyllo dough, traditionally filled with cheese or savory fillings and baked or fried until perfectly crisp.


Ingredients

  • 10 sheets phyllo dough (or yufka)
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup olive oil (plus more for brushing)
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying (if frying instead of baking)

Instructions

  1. In a bowl, mix feta, ricotta, parsley, black pepper, and egg until well combined.
  2. Lay one sheet of phyllo dough on a clean surface and lightly brush with olive oil.
  3. Cut the sheet into long strips and place a spoonful of filling at one end of each strip.
  4. Roll tightly into a cigar shape, folding in the sides as you roll.
  5. Repeat with remaining dough and filling.
  6. To bake: Place rolls on a lined baking tray, brush with olive oil, and bake at 180°C (350°F) for 20–25 minutes until golden brown.
  7. To fry: Heat vegetable oil in a pan and fry rolls until crisp and golden, about 2–3 minutes per side. Drain on paper towels before serving.

Notes

  • Keep phyllo covered with a damp towel to prevent drying out.
  • You can substitute the cheese filling with spinach, minced meat, or potatoes.
  • Serve warm for best texture and flavor.
