Description
Crispy Brazilian-style yuca fries made in the air fryer, seasoned with garlic, herbs, and a hint of lime for a flavorful snack or side.
Ingredients
- 3 yuca roots (or frozen)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 fresh lime
Instructions
- Wash and dry the yuca. Cut off the ends and halve or third the root. Peel off the tough skin, keeping only the white flesh. Discard any pieces with black veins. Skip this step if using frozen yuca and follow package instructions.
- Boil the yuca in salted water for 25 minutes until fork-tender, avoiding overcooking.
- Remove and cool the yuca on a rack until it is safe to handle.
- Cut the yuca lengthwise, remove the fibrous core, and slice into fry-sized pieces.
- Toss the yuca pieces with olive oil, garlic powder, onion powder, oregano, paprika, salt, and the juice of half a lime.
- For air fryer: Preheat to 375°F and cook in a single layer for 7-8 minutes until golden and crispy. For oven: Preheat to 400°F and bake on a lined sheet for 15 minutes until golden.
- Finish with extra salt and lime juice if desired and serve with dipping sauce.
Notes
- Frozen yuca can be used to save prep time.
- Do not overboil to prevent mushy texture.
- Cooling on a rack helps maintain crispiness.
- Serve with garlic aioli, spicy mayo, or chimichurri.
- Store leftovers in the fridge and reheat in the air fryer for best texture.
