Description

Ingredients

  • 2 teaspoons olive oil
  • 2 large garlic cloves, thinly sliced
  • 1 bunch spinach (about 3 ounces), rinsed and torn into bite-sized pieces
  • Kosher salt, to taste
  • 2 1/4 cups chicken broth or water
  • 4 ounces spaghetti
  • 2 egg yolks
  • 1/4 cup half and half
  • 1/2 cup frozen peas
  • Freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook for about 1 minute until fragrant.
  2. Add the spinach in batches, stirring until each handful wilts before adding more.
  3. Season with a pinch of kosher salt and pour in the chicken broth or water. Cover and bring to a simmer.
  4. Add the spaghetti directly into the skillet and cook in the simmering liquid, stirring occasionally, until the pasta becomes tender and most of the liquid is absorbed.
  5. In a small bowl, whisk together the egg yolks and half and half until smooth.
  6. Stir the frozen peas into the pasta and cook for about 1 minute until heated through.
  7. Remove the skillet from the heat and quickly stir in the egg mixture, tossing continuously so the sauce coats the pasta without scrambling the eggs.
  8. Season with freshly ground black pepper and additional salt if needed.
  9. Serve immediately topped with grated Parmesan cheese.
