Description

These Sausage, Egg, and Cheese Breakfast Roll-Ups are a quick and customizable morning meal made with crescent dough, savory sausage, fluffy scrambled eggs, and melty cheese—perfect for breakfast, brunch, or meal prep.

Ingredients

  • 1 can crescent roll dough (8 count)
  • 8 breakfast sausage links or 1/2 pound ground breakfast sausage
  • 4 large eggs
  • 2 tablespoons milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or oil (for cooking eggs)
  • Optional: chopped herbs or hot sauce for extra flavor

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the sausage until fully browned. If using links, slice them once cooked.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Scramble the egg mixture in a lightly greased pan over medium heat until just set.
  5. Unroll the crescent dough and separate it into triangles.
  6. Place a spoonful of scrambled eggs, some sausage, and shredded cheese onto the wide end of each triangle.
  7. Roll each triangle up from the wide end to the point, enclosing the filling.
  8. Arrange roll-ups on the prepared baking sheet.
  9. Bake for 12–15 minutes, or until golden brown and cooked through.
  10. Let cool slightly before serving.

Notes

  • Try using bacon, ham, or plant-based sausage for variation.
  • Add vegetables like bell peppers, onions, or spinach to the egg mixture.
  • Use different cheeses like mozzarella, Swiss, or pepper jack for a flavor twist.
  • To make mini roll-ups for parties, use half-sized crescent triangles.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
