Description

These classic British scones are tender, flaky, and lightly sweetened. Perfect for afternoon tea, they pair beautifully with clotted cream and jam.


Ingredients

  • 2 cups (260g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 5 tablespoons (70g) cold unsalted butter, cut into small cubes
  • ¾ cup (180ml) heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ⅓ cup (50g) currants or raisins (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  4. In a small bowl, whisk together the cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry mixture and stir just until combined. If using, fold in the currants or raisins.
  6. Turn the dough out onto a lightly floured surface and gently knead a few times to bring it together.
  7. Pat the dough into a 1-inch thick round and cut into 8 wedges or use a round cutter for traditional round scones.
  8. Place the scones on the prepared baking sheet and brush the tops with a little cream.
  9. Bake for 13 to 15 minutes or until the tops are golden brown.
  10. Transfer to a wire rack and allow to cool slightly. Serve warm or at room temperature with clotted cream and jam.

  • You can freeze unbaked scones and bake them straight from frozen, adding a couple of minutes to the baking time.
