Description

This Broccoli Caesar Salad is a fresh, crunchy twist on the classic Caesar, featuring roasted broccoli, crispy chickpeas, and a creamy homemade Caesar dressing. It’s hearty, flavorful, and perfect as a side or light main dish.


Ingredients

  • 2 heads of broccoli, cut into florets
  • 1 (15-ounce) can chickpeas, drained, rinsed, and patted dry
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 garlic clove, finely grated
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (for dressing)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Spread the broccoli florets and chickpeas on the baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  3. Roast in the oven for 25-30 minutes, tossing halfway through, until the broccoli is browned and the chickpeas are crispy.
  4. Meanwhile, make the Caesar dressing: In a bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, garlic, Worcestershire sauce, salt, pepper, and 1/4 cup grated Parmesan cheese until smooth.
  5. Once the broccoli and chickpeas are roasted, allow them to cool slightly.
  6. In a large bowl, combine the roasted broccoli and chickpeas with the dressing. Toss until evenly coated.
  7. Top with remaining Parmesan cheese and chopped parsley, if using. Serve warm or at room temperature.

  • For a vegan version, use vegan mayo and omit Parmesan or use a dairy-free alternative.
