Description

This Broccoli Casserole with Rice is a comforting, cheesy side dish made with broccoli, rice, and a creamy sauce. It’s easy to prepare and perfect for family dinners or potlucks.


Ingredients

  • 1 (10 ounce) package frozen chopped broccoli
  • 1 cup cooked white rice
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup shredded Cheddar cheese
  • ½ cup chopped onion
  • ½ cup mayonnaise
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 1 1/2 quart casserole dish.
  2. Cook the broccoli according to the package directions and drain well.
  3. In a large bowl, mix together the cooked broccoli, cooked rice, cream of mushroom soup, shredded Cheddar cheese, chopped onion, mayonnaise, and beaten eggs. Season with salt and pepper to taste.
  4. Pour the mixture into the prepared casserole dish.
  5. Bake in the preheated oven for 30 to 35 minutes, or until the casserole is bubbly and the top is lightly browned.
