Description

Ingredients

  • 1 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1 cup unsalted butter
  • 3 tablespoons dry milk powder
  • 3.5 ounces dark chocolate (70% cocoa), roughly chopped
  • 4 tablespoons Dutch-processed cocoa powder
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8×8 inch square baking pan with parchment paper.
  2. In a small bowl, whisk together the powdered sugar, flour, and salt.
  3. In a stainless-steel pan over medium heat, brown the butter until amber in color and nutty in aroma. Whisk in the dry milk powder.
  4. Transfer the brown butter to a heat-proof bowl. Add the chopped dark chocolate and cocoa powder, stirring until smooth and fully melted.
  5. In a large bowl, whisk together the eggs, granulated sugar, and vanilla until the sugar dissolves.
  6. Slowly pour the brown butter and chocolate mixture into the egg mixture, whisking continuously to combine.
  7. Fold in the dry ingredients and chocolate chips (if using) until just combined.
  8. Spread the batter evenly into the prepared pan.
  9. Bake for 28–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Cool in the pan for 1–2 hours, then lift out using the parchment and cut into 16 squares.

Notes

  • Add chopped walnuts or pecans for extra crunch.
