Ingredients
1 cup unsalted butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1 cup toffee bits or chopped toffee bars
Instructions
- Brown the Butter: In a saucepan over medium heat, melt the butter. Continue to cook, swirling the pan occasionally, until the butter turns a golden brown color and develops a nutty aroma. Remove from heat and allow to cool for 10-15 minutes.
- Prepare Wet Ingredients: In a large mixing bowl, beat together the brown sugar and granulated sugar until light and fluffy. Add the eggs, one at a time, followed by the vanilla extract. Beat until combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
- Add the Brown Butter and Mix-ins: Pour the cooled brown butter into the dough and stir it in until evenly combined. Fold in the chocolate chips and toffee bits.
- Chill the Dough: Cover the dough and refrigerate for at least 30 minutes (up to 2 hours). Chilling the dough helps the cookies maintain their shape and enhances the flavor.
- Preheat the Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Shape the Cookies: Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake the cookies for 10-12 minutes or until the edges are golden and the centers are set. The cookies will continue to cook on the baking sheet for a couple of minutes after removing them from the oven.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Nutty Twist: Add 1 cup of chopped nuts, such as pecans or walnuts, for an extra crunchy texture.
- Dark Chocolate: Swap the semi-sweet chocolate chips for dark chocolate chips or chunks for a richer, less sweet flavor.
- Salted Toffee: Use salted toffee bits or sprinkle a little sea salt on top of the cookies before baking for a perfect balance of sweet and salty.
- Gluten-Free Version: Use a gluten-free flour blend to make these cookies gluten-free. Just make sure the toffee bits are gluten-free as well.
