Description

This Chai Cake is a moist and fluffy spiced cake layered with creamy chai-spiced buttercream, perfect for cozy gatherings and festive occasions.


Ingredients

  • 2 ½ cups (313g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cardamom
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • 1 cup (226g) unsalted butter, room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 cup (240ml) buttermilk, room temperature
  • ¼ cup (60ml) brewed chai tea, cooled

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and line three 6-inch cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together on medium-high speed until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  5. Combine the buttermilk and brewed chai tea in a small bowl or measuring cup.
  6. Alternate adding the dry ingredients and the buttermilk/chai mixture to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  7. Divide the batter evenly among the prepared pans and smooth the tops.
  8. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cakes to cool in the pans for 10 minutes, then remove and cool completely on wire racks before frosting.
  10. Frost and layer the cakes with chai buttercream, then decorate as desired.

Notes

  • Brew a strong chai tea for a more intense flavor.
  • Make sure ingredients are at room temperature for best texture.
  • Wrap cake layers in plastic and chill if assembling later.
  • The cake layers can be made ahead and frozen for up to 1 month.
