Description

These Brown Sugar Pop Tart Cookies are soft, chewy cookies inspired by the classic toaster pastry. They’re filled with a brown sugar and cinnamon mixture and topped with a sweet glaze, making them the perfect nostalgic treat.


Ingredients

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups (343g) all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup (50g) brown sugar (for filling)
  • 1/2 tablespoon ground cinnamon (for filling)
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, cornstarch, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. In a small bowl, mix together 1/4 cup brown sugar and 1/2 tablespoon cinnamon for the filling.
  7. Scoop dough into 2-tablespoon balls, flatten slightly, and add a small amount of filling in the center. Fold the dough around the filling and roll into a ball again.
  8. Place on the baking sheet and bake for 10–12 minutes, until edges are set and centers are still soft.
  9. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk together powdered sugar, milk, and vanilla to make the glaze.
  11. Drizzle glaze over cooled cookies and allow it to set before serving.
