Description

Buffalo Chicken Biscuit Bombs are spicy, cheesy, and easy-to-make bite-sized snacks, perfect for game days or parties. Stuffed with shredded buffalo chicken and cheese, wrapped in biscuit dough, and baked to golden perfection.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1/3 cup buffalo wing sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 can (16.3 oz) refrigerated biscuit dough (8-count)
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp melted butter
  • 1 tsp chopped fresh parsley (optional)
  • Ranch or blue cheese dressing, for dipping

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix shredded chicken, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  3. Separate biscuits and flatten each into a 4-inch round using your hands or a rolling pin.
  4. Spoon about 2 tablespoons of the chicken mixture and a pinch of shredded cheese into the center of each biscuit round.
  5. Fold the edges of the biscuit dough up and over the filling, pinching to seal and forming a ball.
  6. Place the sealed side down on the prepared baking sheet. Repeat with remaining biscuits.
  7. Brush the tops of each bomb with melted butter.
  8. Bake for 18–20 minutes, or until golden brown and cooked through.
  9. Sprinkle with parsley, if using. Serve warm with ranch or blue cheese dressing for dipping.

Notes

  • You can substitute the cheese with your favorite type, such as Monterey Jack or Pepper Jack for extra spice.
  • To save time, use pre-cooked shredded chicken or canned chicken.
  • Serve immediately for best texture; reheating may soften the biscuit crust.
