Ingredients
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1/2 cup buffalo wing sauce
- 1 small onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 4 slices provolone cheese
- 4 hoagie rolls
- Ranch or blue cheese dressing (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the sliced onions and bell peppers and cook until softened, about 5 minutes. Remove and set aside.
- In the same skillet, add the thinly sliced chicken and cook until no longer pink, about 6-8 minutes.
- Season the chicken with salt and pepper, then stir in the buffalo wing sauce and cook for another 2 minutes until well coated.
- Return the cooked onions and peppers to the skillet and stir to combine.
- Divide the mixture into 4 portions and top each with a slice of provolone cheese. Cover the skillet briefly to melt the cheese.
- Toast the hoagie rolls if desired, then fill each with the cheesy buffalo chicken mixture.
- Drizzle with ranch or blue cheese dressing, if using, and serve immediately.
