Description

This Butter Chicken Skillet, inspired by Texas Roadhouse, is a rich, creamy, and flavorful one-pan dinner. It features tender chicken cooked in a buttery tomato-based sauce with aromatic spices, perfect for a comforting meal.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cut into chunks
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup tomato sauce
  • 1/2 cup heavy cream
  • 1/4 cup plain Greek yogurt
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Cooked rice or naan, for serving

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger; cook for another minute until fragrant.
  4. Add the chicken pieces and cook until browned on all sides, about 6-8 minutes.
  5. Stir in cumin, paprika, garam masala, turmeric, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  6. Pour in the tomato sauce, stir well, and let it simmer for 10 minutes.
  7. Lower the heat and mix in the heavy cream and Greek yogurt. Simmer for an additional 5 minutes until the sauce is thickened and the chicken is fully cooked.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped cilantro if desired and serve hot with rice or naan.

Notes

  • Adjust cayenne pepper for desired spice level.
  • Use full-fat Greek yogurt for a creamier texture.
  • This dish tastes even better the next day as flavors deepen.
