Description
Buttery, tender strawberry shortbread bites filled with fresh strawberry flavor and baked into perfectly sweet, bite-sized treats.
Ingredients
- 1/2 cup unsalted butter, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/8 teaspoon salt
- 1/3 cup finely chopped fresh strawberries (patted dry)
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin pan or baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
- Gently fold in the finely chopped strawberries.
- Scoop small portions of dough and roll into balls. Place into the prepared pan or onto the baking sheet.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the shortbread bites to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Pat strawberries dry to prevent excess moisture in the dough.
- Do not overmix the dough to keep the shortbread tender.
- Store in an airtight container at room temperature for up to 3 days.
- Dust with additional powdered sugar before serving if desired.
