Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/3 cup finely chopped fresh strawberries (patted dry)
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin pan or baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
  6. Gently fold in the finely chopped strawberries.
  7. Scoop small portions of dough and roll into balls. Place into the prepared pan or onto the baking sheet.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow the shortbread bites to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
