Description

This Cajun Blackened Chicken is a flavorful and spicy dish made with a homemade blackening seasoning. Perfectly seared in a cast-iron skillet, this chicken is juicy, smoky, and full of bold Cajun flavor.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Preheat a cast iron skillet over medium-high heat.
  2. In a small bowl, combine the paprika, onion powder, garlic powder, oregano, thyme, black pepper, cayenne pepper, and salt to make the blackening seasoning.
  3. Pound the chicken breasts to an even thickness for even cooking.
  4. Rub both sides of the chicken breasts generously with the blackening seasoning.
  5. Add olive oil to the hot skillet.
  6. Carefully place the seasoned chicken breasts in the skillet.
  7. Cook for about 5 to 6 minutes on each side, or until the chicken is cooked through and has a dark, blackened crust.
  8. Remove from the skillet and let rest for a few minutes before serving.

Notes

  • You can adjust the cayenne pepper to make it more or less spicy.
  • This chicken is great served over rice, in salads, or in wraps.
