Description
This Cajun Blackened Chicken is a flavorful and spicy dish made with a homemade blackening seasoning. Perfectly seared in a cast-iron skillet, this chicken is juicy, smoky, and full of bold Cajun flavor.
Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons smoked paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 2 tablespoons olive oil (for cooking)
Instructions
- Preheat a cast iron skillet over medium-high heat.
- In a small bowl, combine the paprika, onion powder, garlic powder, oregano, thyme, black pepper, cayenne pepper, and salt to make the blackening seasoning.
- Pound the chicken breasts to an even thickness for even cooking.
- Rub both sides of the chicken breasts generously with the blackening seasoning.
- Add olive oil to the hot skillet.
- Carefully place the seasoned chicken breasts in the skillet.
- Cook for about 5 to 6 minutes on each side, or until the chicken is cooked through and has a dark, blackened crust.
- Remove from the skillet and let rest for a few minutes before serving.
Notes
- You can adjust the cayenne pepper to make it more or less spicy.
- This chicken is great served over rice, in salads, or in wraps.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
