Description

Juicy, oven-baked Cajun chicken drumsticks coated in bold, smoky seasoning and finished with melted butter for extra flavor. A simple and delicious main course ready in just 30 minutes.


Ingredients

  • 6 chicken drumsticks (about 2 lbs.)
  • 1 tablespoon vegetable oil
  • 23 teaspoons homemade Cajun seasoning (divided, adjust to taste)
  • 1 tablespoon unsalted butter (melted)
  • Parsley (chopped)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with greased foil.
  2. In a large bowl, add chicken and vegetable oil. Toss to coat. Sprinkle 1/2 teaspoon Cajun seasoning over the chicken and toss until well coated. Add another 1/2 teaspoon Cajun seasoning and toss again. Place chicken drumsticks evenly spaced apart on the prepared baking sheet.
  3. Bake for 25–32 minutes, flipping once halfway through, until the internal temperature reaches 165°F on a meat thermometer.
  4. Transfer the cooked drumsticks to a clean large bowl. Drizzle with melted butter and sprinkle remaining Cajun seasoning over the chicken, adding more to taste if desired. Toss gently until coated.
  5. Garnish with chopped parsley and serve with roasted green beans and potatoes or air fryer Brussels sprouts.
