Description
Juicy, oven-baked Cajun chicken drumsticks coated in bold, smoky seasoning and finished with melted butter for extra flavor. A simple and delicious main course ready in just 30 minutes.
Ingredients
- 6 chicken drumsticks (about 2 lbs.)
- 1 tablespoon vegetable oil
- 2–3 teaspoons homemade Cajun seasoning (divided, adjust to taste)
- 1 tablespoon unsalted butter (melted)
- Parsley (chopped)
Instructions
- Preheat oven to 400°F. Line a baking sheet with greased foil.
- In a large bowl, add chicken and vegetable oil. Toss to coat. Sprinkle 1/2 teaspoon Cajun seasoning over the chicken and toss until well coated. Add another 1/2 teaspoon Cajun seasoning and toss again. Place chicken drumsticks evenly spaced apart on the prepared baking sheet.
- Bake for 25–32 minutes, flipping once halfway through, until the internal temperature reaches 165°F on a meat thermometer.
- Transfer the cooked drumsticks to a clean large bowl. Drizzle with melted butter and sprinkle remaining Cajun seasoning over the chicken, adding more to taste if desired. Toss gently until coated.
- Garnish with chopped parsley and serve with roasted green beans and potatoes or air fryer Brussels sprouts.

- Adjust the Cajun seasoning to your preferred spice level.
- For extra crispiness, broil for 2–3 minutes at the end of cooking.
